Coconut Cake
- Source
- Grandma's Notepad (handwritten, p. 7)
Ingredients
- 1 box white cake mix
- Water, vegetable oil, and eggs, as directed on the box
- 3 tsp coconut extract
- 1/2 cup sweetened coconut flakes
Steps
- Prepare the cake mix as directed on the box, adding the coconut extract and coconut flakes.
- Bake in a 9x13 pan.
Notes
- At the top of this page is a heavily scribbled-over, crossed-out draft describing what looks like a different (possibly poke-cake) version: bake a white or yellow cake mix as directed, then add instant coconut cream pudding (2-4 oz boxes) mixed with 3 cups milk, topped with a whipped topping of 2 cups heavy whipping cream, 1/2 cup powdered sugar, and 1/3 cup sweetened coconut flakes. It’s unclear whether that pudding/whipped-cream version was abandoned in favor of the simpler recipe above, or whether the topping is actually meant to go with it. Worth checking with family which version is the “real” one, and whether the topping applies.
