Cook
boil to 260°F

Ingredients

  • 4 cups sugar
  • 2/3 cup water
  • 4 egg whites
  • 1 cup white corn syrup
  • Pecans, to taste (for mixing in and decorating)

Steps

  1. Beat the egg whites; set aside.
  2. Mix together the sugar, water, and syrup. Boil until 260°F, or until a bit dropped in cold water forms a hard crack.
  3. Pour the syrup in a thin stream into the egg whites, whipping slowly at first, then beating faster.
  4. Add nuts and beat.
  5. When the shininess is gone and the candy turns dull, very quickly pour into a buttered pan.
  6. Cool and decorate with pecan halves, then cut.

Notes

  • “Nuts” in step 4 aren’t listed with a quantity in the ingredients — likely pecans, based on the decorating step.
