For even richer flavor, use slightly more expensive Gruyère cheese instead of ordinary Swiss.
Ingredients
- 2 Tbs. butter
- 1 pkg. (10 oz.) frozen chopped onions, thawed
- 1/2 tsp. onion powder
- 2 Tbs. Worcestershire sauce
- 2 cans (14 1/2 oz. each) fat-free, lower-sodium beef broth
- 1/4 cup chopped fresh parsley
- 2 bay leaves
- 1 cup large garlic croutons
- 1 cup shredded Swiss cheese, 4 oz.
Steps
- Position broiler rack so that tops of bowls will be 4" from heat source. Preheat broiler. In large pot, melt butter over medium-high heat. Add onions and onion powder; cook, stirring often, until tender, 7-8 minutes. Add Worcestershire; cook, stirring often, until browned, 2-3 minutes.
- Add broth, 2 cups water, parsley and bay leaves. Bring to boil. Reduce heat to low; simmer 5 minutes. Remove bay leaves.
- Divide soup among 6 (1 1/2 cup) broiler-proof bowls; place on baking sheet. Top with croutons and cheese. Broil until golden and bubbly, 4-5 minutes.
