- 425°F, 12 min
Ingredients
- 1 lb boneless chicken breast
- 2 Tbsp butter, divided
- 1/2 tsp salt
- 1/2 tsp thyme
- 1 pkg (16 oz) frozen vegetables, thawed and drained
- 1 can cream of chicken soup
- 1/3 cup dry white wine
- 1 refrigerated pie crust (1/2 of a 15 oz pkg), at room temperature
Steps
- Remove skin from chicken and discard. Cut chicken into 1-inch pieces.
- Preheat oven. Melt 1 Tbsp butter in a broiler-proof skillet over medium-high heat.
- Add chicken; sprinkle with salt and thyme. Cook.
- Reduce to medium-low. Stir in vegetables, soup, and wine; simmer 5 min.
- While the soup mixture simmers, unwrap the pie crust. Using a small cookie cutter, make several cut-outs.
- Remove the chicken mixture from heat; top with the pie crust.
- Melt the remaining 1 Tbsp butter; brush the pie crust and the cut-outs.
- Bake 12 min. Turn oven to broil — 2 min or until crust is golden brown.
