Ingredients
- 1 lb lean ground beef
- 1 pkg chile seasoning mix
- 1 medium onion, chopped fine
- 2 cups tomato juice
- 2 tsp chili powder
- 1/4 tsp paprika
- 1/4 tsp oregano
- 1/4 tsp garlic powder
- 1 1/4–1 1/2 cups cornmeal
- Brown paper or wrapping foil (or cornhusks, size 7x8)
Steps
- Brown meat and onion; drain off fat.
- Add tomato juice and the packaged seasoning mix. Heat to boiling. Drain through a colander, set meat aside.
- To the juice, add enough water to make 4 cups of liquid; add the remaining spices.
- Heat to boiling. Slowly add cornmeal (sprinkling it in), stirring constantly. Cook about 4-5 min.
- Cook for a few more minutes.
- Spread a rectangular layer of the cooked mush on a piece of brown paper (or wrapping foil, or a 7x8 cornhusk), leaving space all around to fold over the sides and ends.
- Put a small amount of the meat down the center of the mush, bring the sides together, fold down. Also fold up the ends.
- To serve: steam or heat in the oven (if using paper, you might microwave instead). Steaming is best.
- Serve as is, or with the gravy or any salsa sauce.
Notes
- This recipe spans two cards (p. 74, continued on p. 75 marked “(over)”) — merged here into one recipe rather than split across two files. Both original pages are worth keeping together if you rescan.
- The exact cornmeal-to-mush consistency and quantities are a little loosely described on the card — a family member familiar with the recipe could probably tighten this up.
