- 350°F, 23-28 min
Ingredients
- 1/4 cup shortening
- 1 cup sugar
- 1 egg
- 1 1/2 cups ripe mashed banana (about 3 large)
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
Caramel Icing
- 2 Tbsp butter
- 1/4 cup packed brown sugar
- 1 Tbsp milk
- 1/2 cup confectioners’ sugar
Steps
- In a large bowl, cream the shortening and sugar until fluffy. Beat in the egg, then the banana and vanilla. Combine the flour, baking soda, and salt; add to the creamed mixture just until moistened.
- Fill paper-lined jumbo muffin cups 3/4 full. Bake at 350°F for 23-28 min. Cool 5 min before removing from the pan, then cool completely.
- Icing: in a small saucepan, melt the butter over medium heat. Stir in the brown sugar and milk; bring to a boil. Cool slightly, then beat in the confectioners’ sugar until smooth. Transfer to a small plastic bag, cut a small hole in the corner, and drizzle over the muffins.
