Ingredients

  • 1 (16 oz.) pkg. Just Perfect Extra Lean Ground Turkey
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 (10 oz.) can mild enchilada sauce
  • 1 (16 oz.) can kidney beans, drained
  • 1 cup frozen or canned corn
  • 1 cup shredded cheddar cheese
  • 1 (8 oz.) pkg. corn bread mix
  • 1/3 cup milk
  • 1 large egg

Steps

  1. Heat oven to 400°F. Crumble turkey into a large deep nonstick skillet; add bell pepper. Cook over medium-high heat 5 minutes, stirring frequently.
  2. Stir in garlic, chili powder, cumin and salt. Add enchilada sauce, beans and corn. Bring to a simmer over medium heat; simmer 5 minutes (mixture will be thick).
  3. Transfer to an 8 or 9-inch baking dish; top with cheese.
  4. Combine corn bread mix, milk and egg; mix just until dry ingredients are moistened. Spread batter evenly over mixture in dish. Bake 18 to 20 minutes or until golden brown. Let stand 5 minutes before serving.

Notes

Serving suggestion: Serve with a fresh fruit salad or a tossed green salad.

Note: filename suffixed “-2” — this is a second, unrelated “Tamale Pie” recipe transcribed from this same image batch (a handwritten version from Dorothy Daffron appears on a separate source image and is filed as tamale-pie-kraft-3.md).
