Chewy Oatmeal Cookies

Ingredients

  • 3/4 cup butter-flavor shortening
  • 1 1/4 cups packed light brown sugar
  • 1 egg
  • 1/3 cup milk
  • 1 1/2 tsp vanilla
  • 3 cups quick oats
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1 cup raisins
  • 1 cup chopped walnuts

Steps

  1. Combine shortening, brown sugar, egg, milk, and vanilla. Beat at medium speed until well blended.
  2. Combine oats, flour, soda, salt, and cinnamon; mix into the creamed mixture at low speed.
  3. Stir in raisins and nuts.
  4. Drop rounded tablespoon onto a greased sheet, 2 inches apart.
  5. Bake at 375°F for 10-12 min.
  6. Cool 2 min, remove cookies, and place on sheets of foil to cool completely.
