Ingredients
- 3 cups all-purpose flour
- 1 1/2 tsp salt
- 1 tsp baking soda
- 1/4 cup (2 oz) unsalted butter, cold, cut into small pieces
- 1 1/3 to 1 2/3 cup buttermilk, cold
Steps
- Line a 4 or 5 qt dutch oven with parchment paper; if you don’t have one, use a sheet pan.
- In a large bowl, mix/whisk the flour, soda, and salt. Cut in the butter pieces using a pastry cutter or fork.
- Add the buttermilk — you want the mixture very soft.
- Put in the baking dish, shape into a disk, and cut an X in the center, deep almost to the bottom.
- Put the lid on. Bake at 450°F for 35 min.
- Remove the lid and bake another 10-12 min.
